Once again, these are some of my favorites. Yum!
Carrot Salad
1 (3 oz) boxes orange Jello
1 (15 oz) can crushed pineapple
2 c. grated carrots
Drain pineapple & save juice. Boil juice plus enough water to make 3 cups liquid. Stir in gelatin until dissolved. Add 2 cups cold water. Chill. Combine all ingredients in serving dish. Let set until solid.
Broccoli Slaw Salad
2 lbs. broccoli slaw
2 bunches green onions, sliced
1 c. roasted, salted sunflower seeds
1 pkg. Ramen noodles, oriental flavoring
Toss all ingredients together, except flavor packet from Ramen noodles.
1 c. veg. oil (skimpy)
1/3 c. apple cider vinegar
1/2 c. sugar
1 pkt. flavoring from Ramen noodles
Mix oil, vinegar, sugar & flavoring to make dressing. Pour over salad ingredients about 1/2 hour before serving.
Poppy Seed Salad
1 head romaine lettuce
1 head red leaf lettuce
8-10 fresh strawberries, sliced
1 can mandarin oranges
1 red onion, thinly sliced
honey roasted almonds
Cut up lettuce into a bowl. Add strawberries, oranges, a little red onion. Sprinkle with almonds.
1/2 c. sugar
1 tsp. dry mustard
1 tsp. salt
1/3 c. white vinegar
3/4 - 1 c. oil
1 T. poppy seeds
Place sugar, mustard, salt & vinegar in blender & blend well. Slowly add oil & blend until thick. stir in poppy seeds. Store in refrigerator until ready to serve.
*You may also add cooked, cubed chicken.

Recipe of the Day - Dips
This dip recipe is from scarlet and gray
Black Bean Salsa
1 - 15 oz. can yellow corn
1 - 15 oz. can white corn
2 - 15 oz. cans black beans
5 Roma tomatoes
2 bunches green onion
1 packet Good Seasons dressing
1 bunch cilantro
2 garlic cloves, minced
2 T. oil
1/3 cup water
1/3 cup vinegar
Drain corn. Drain and rinse beans. Chop onion and tomato and mix all together. Combine good seasons dressing, oil, water, and vinegar, garlic, and cilantro. Shake well and pour over mixture. Serve immediately or refrigerate.

Well, the poppy seed salad you mentioned is my absolute favorite and I make that one the most. But, I have two other favorites:
Country French Salad
Red leaf lettuce
Green leaf lettuce
Bleu cheese, crumbled
Medium purple onion, sliced
Small granny smith apple, sliced
Walnuts, broken
Dressing:
1/4 cup sugar
1 tsp. dry mustard
1 tsp. paprika
1 tsp. celery salt
2 T. minced onion
1 T. lemon juice
5 T. red wine or herb vinegar
1 cup salad oil
1/4 cup honey
Shake in jar and pour over salad just before serving.
*note - Salad toppings are optional. I prefer without bleu cheese.
Taco Salad
1 head lettuce
1 1/2. lbs. ground beef
Taco seasoning
Kidney beans, drained
Onion, chopped
Tomato, chopped
Black olives, drained
8 oz. cheddar cheese
Doritos
8 oz. Catalina dressing
Tear up lettuce and put in large bowl. Brown and drain ground beef. Mix taco seasoning into ground beef, add to lettuce. Add kidney beans, onion, tomato, black olives, and cheese. Break chips on top. Pour on Catalina dressing and mix. Enjoy!
This has been our son's favorite salad since he was a little boy!
Lime-Pear Salad
1 C. pear juice from can.Add water if needed to make the 1 C.
1 C. cold water
1 large pkg. lime gelatin
1 Med. can pears
1 C. heavy cream, whipped
1 large pkg. cream cheese (8 oz)
Heat pear juice and cold water with gelatin; cool until partially thickened.Whip cream; fold in cream cheese. Mash pears (I use mixer); add to cooled mixture. Fold everything together and chill until firm.
Yum! Yum! I've substituted peaches and peach gelatin, strawberries and strawberry gelatin and both were great! ~Bev~
This is a yummy one I got from Jenna Kempf - the dressing is delicous!
Walnut and Apple Salad
Boston bibb lettuce
Walnuts cooked in sugar over medium low heat until sugar melts
Feta Cheese
Gala apples
Mix together and top with Poppy seed dressing:
3/4 C olive oil
1/3 C honey
1/4 C red wine vinegar
2 t. poppy seeds
1 t. finely chopped onion
1 t. honey dijon mustard
1/2 t. salt
Combine all ingredients in a blender or a dressing container. Chill and mix well before serving.
Yield: 1 1/3 C dressing
Broccoli Salad
1 head Romaine Lettuce - torn
4 green onions - chopped
1 pkg Ramen noodles - chicken flavor
1/4 cup butter
1 cup chopped pecans
1 head broccoli
Dressing:
1 cup sugar
3/4 cup oil
1/2 cup red wine vinegar
1 tablespoon soy sauce
chicken flavor packet from noodles
Combine dressing ingredients, shake well.
In skillet, melt butter, add noodles and pecans until brown. Drain and cool.
Combine salad ingredients, pour on dressing, toss to coat.
By the way - Brianne "stole" my very favorite salad recipe, but the broccoli one is equally as good!
Glad she gave me the credit though! :) I should pass along that credit to my mom.
